It was so cold/grey/rainy here yesterday,
I rocked a pair of sweat pants and uggs and didn't leave my house!
Being a 'stay at home mom' and then
ACTUALLY staying home is sort of nice.
I want to share this super yummy / hearty / simple dinner with you guys. Since the weather was in the 40's yesterday I thought this would be a good warm meal.
I make this a few times in the winter, and each time it's different, but last night looked like this:
Super Simple Chicken Pot Pie:
Ingredients-
1 box of pie crust (2 rolls)
4-5 red potatoes (skin on)
2 medium sized skinless/boneless chicken breast
1 can of a 'cream' soup
(i used cream of broccoli because thats what i had on hand)
1-2 cups of Milk
1 can of corn
1 frozen bag of peas
1 frozen bag of green beans
(any vegetable would work)
Salt & Pepper
Directions:
Preheat oven to 375
(or as according to the pie crust directions)
bake the bottom crust alone accordingly.
| i usually make 2 and freeze one or 1 will be a vegetarian option |
Wash the potatoes and chop.
I then steam mine until tender.
Cube the chicken, season with Salt & Pepper
then sauté.
Once thoroughly cooked, stir in cream soup.
Add in your vegetable selections
Stir!
Add 1 - 1 1/5 cups of milk
I guess the milk amount depends on your preference for how creamy it is.
Ryan & I prefer it on the dry side and hearty.
Scoop into pie pan and cover with remaining crust.
BAKE!
375 for 22 minutes
I made myself a "V"egetarian version:
(broccoli, green beans, corn, potatoes, peas)
ENJOY!
(I eat my veggie pot pie with tons of Sweet Baby Rays BBQ on it)
